Can you smell it? The turkey cooking in the oven. The sweet potato casserole cooling down on the counter? Thanksgiving is almost here, and it is a great opportunity to introduce kids to new foods that they might not have tried before.

Appropriately, this month’s Harvest of the Month is sweet potatoes.

These sweet, starchy root vegetables are a staple at many Thanksgiving meals. Candied. Fried. Roasted. Mashed. In a casserole. There is a variety of ways to cook up this nutritious root. Sweet potatoes are packed full of fiber, as well as vitamin A, vitamin C, manganese, calcium and iron.
