Appropriately, this month’s Harvest of the Month is sweet potatoes.
These sweet, starchy root vegetables are a staple at many Thanksgiving meals. Candied. Fried. Roasted. Mashed. In a casserole. There is a variety of ways to cook up this nutritious root. Sweet potatoes are packed full of fiber, as well as vitamin A, vitamin C, manganese, calcium and iron.
